Soooo…did you beat cancer or what?
This is the question I’ve been asked in various ways approximately 10928470529835 times in the past few months. I haven’t really sat down to give an update because honestly, I just wasn’t ready to. Cancer has consumed just about every aspect of our lives for the past 1.5 years + I just didn’t even know when I would be ready to talk about it. I still don’t feel fully ready to talk about it. But I realize that people are only asking because they care + the hundreds of people who have so faithfully prayed for us deserve an update….so here it is…
Soooo…I know it’s been FOREVER since I’ve written anything, and I’m making a conscious effort to change that. Life has been a bit crazy + big things are happening in our life (more on that later). But until then, I’ve been wanting to share some of my favorite things with all of you + it would take way too many instagram posts so here we are. And if this isn’t your thing, that’s okay too.
It’s been awhile since I wrote about anything. To be honest, most days I only have time to write a few sentences on Instagram. Working from a hospital room is hard, and the internet is bad, and everything seems to take 10x as long as it should. This past month has been weird, and hard, and stretching, and uncomfortable, and strangely sweet. Sometimes when I have random thoughts I write them down so that I can come back to them. This is a compilation of all those things.

I love a good recipe! But the thing I hate most is finding an excellent recipe and then realizing that it takes way too many steps or ingredients. I wasn’t a fan of baked oatmeal growing up, but I gave it another shot. The recipe I used was good, but not perfect so I made a few adjustments to make it perfect. This baked oatmeal takes literally 5 minutes to mix up and is ready in less than an hour. (Plus, if you plan right, you only need to get 3 or 4 dishes dirty!)
